Rocco's Favorite Recipes
How about throwing a dinner party for your friends? Before you start, loosen everyone up with an ice cold
Cherry Punch, then slip into the kitchen to prepare this
fast and tasty menu of Rocco's personal favorites.
Cherry Punch
2 Parts Three Olives Raspberry
2 Parts Three Olives Cherry
2 Parts Stoli Strawberry
1 Part O.J
1 Part Cranberry
1 Part Pineapple
Splash of sour
Shake all ingredients in a martini shaker until ice cold. Strain martini into an up glass and garnish with with an orange slice.
White Bean Puree
15oz. cans of Great Northern Beans (reserving some liquid)
2 cloves roasted garlic
1 lemon for juice
Extra virgin olive oil
Salt and Pepper
Worcestershire
Thyme
- Use canned great northern beans or soak dry white beans overnight in cold water.
(If using dry beans cook beans until tender in chicken stock.)
- In food processor combine beans roasted garlic cloves, thyme, salt and pepper, dash of Worcestesrshire, extra virgin olive oil, splash of reserved bean liquid. Puree until smooth consistency.
Serve with toasted pita chips and enjoy.
Sweet Corn and Truffle Chowder
6 ears of Sweet Corn
3 Idaho Potatoes
1 Rib Celery
1 Carrot
1 Onion
2 Qt. Heavy Cream
10 pieces Fresh Bacon
2 Tbs. Truffle Butter
- Roast corn for 25 minutes
- In saucepan, cook bacon until brown. Add chopped celery, carrots, and onion to bacon and sweat for 10 minutes
- Add 1Tbsp. flour to the vegetables and cook for 3 minutes
- Add corn and heavy cream and reduce slowly for 45 minutes
- Taste and season with fresh thyme and sea salt
- Whisk in truffle butter and serve
Wine Pairing: Duckhorn Sauvignon Blanc. Light, creamy texture with hints of oak and bright apple and pear flavor.
Olive Tapenade-Bread Spread
Kalamata Olives
Spanish Olives
Sundried tomato
Extra Virgin Olive Oil
Chopped Fresh Basil
Black Pepper
- Pit and Chop Olives
- Chop tomatoes and basil
- Combine all ingredients and add olive oil to desired consistency.
- Spread on bread of your choice.
